From: "Edoc" Subject: Mandarin Orange Pie (3) Collection Date: Monday, October 14, 2002 9:26 PM Mandarin Orange Pie Mandarin Orange Pie Mandarin Orange Cheesecake Pie Mandarin Orange Pie 1 1/4 cups graham wafer crumbs 1 tablespoon sugar 1/4 cup melted butter 1 envelope unflavored gelatin 2 tablespoons cold water 1 cup boiling water 1 cup sugar 1/2 cup fresh lemon juice 2 cups whipping cream 1 can (10 oz.) mandarin oranges, drained Mix graham wafer crumbs, sugar and melted butter together. Spread in the bottom and up the sides of a 9 inch pie plate. Refrigerate. Mix gelatin with cold water. Stir in boiling water. Add sugar and stir to dissolve. Stir in lemon juice. Refrigerate until it starts to thicken. Whip cream until thick. Fold half of the whipped cream into the gelatin mixture, until blended. Fold in the mandarin oranges. Spoon into the crumb crust. Top with the remaining whipped cream. Refrigerate 3 - 4 hours. Pour into pie crusts and chill well. Mandarin Orange Cheesecake Pie Submitted by: Ready Crust Kitchens Makes 1 pie Prep Time: 10 Minutes Cook Time: 35 Minutes Ready in: 3 Hours 45 Minutes 1 (6 ounce) READY CRUST Shortbread Pie Crust 12 ounces cream cheese, softened 1/2 cup sugar 1/2 cup frozen orange juice concentrate, pulp free 2 eggs 1 (15 ounce) can mandarin oranges, drained Preheat oven to 375 degrees F. Mix cream cheese, sugar and orange juice concentrate on medium speed until fluffy. Add eggs, one at a time, and mix until blended; fold in mandarin oranges. Pour into crust. Bake for 30 minutes or until center is just set. Cool and refrigerate 3 hours. Soften cream cheese in microwave on high 15 to 20 seconds.
